Ingredients
  

Vegetables

  • 1 cup broccoli Fresh, chopped
  • 1 cup cauliflower Fresh, chopped
  • 1 cup mushrooms Sliced

Cheese and Dairy

  • 1 cup shredded cheese Any type of cheese, such as cheddar or mozzarella
  • 1/2 cup milk Can be substituted with vegetable broth or dairy-free milk

Toppings

  • 1/2 cup breadcrumbs For topping
  • to taste Salt and pepper Season to preference
  • to taste Olive oil For drizzling on top

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the broccoli, cauliflower, and mushrooms.
  • Add milk, cheese, salt, and pepper, mixing until well combined.
  • Transfer the mixture to a greased baking dish.
  • Sprinkle breadcrumbs on top and drizzle with olive oil.

Baking

  • Bake for 25-30 minutes or until the vegetables are tender and the top is golden brown.

Notes

Serve warm as a main dish or side. Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, tightly cover and store for up to 2 months. You can also replace breadcrumbs with crushed crackers or cornflakes for added crunch.
