  • 2 large large onions, thinly sliced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded Use rotisserie chicken to save time.
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the sliced onions and cook slowly, stirring occasionally, until caramelized, about 20-25 minutes.
  • Add the minced garlic and cook for an additional minute.
  • Stir in the chicken broth, white beans, shredded chicken, and thyme. Bring to a simmer and cook for 10 minutes.
  • Season with salt and pepper to taste.

Serving

  • Serve the soup hot in bowls with a sprinkle of parsley on top.
  • Offer crusty bread or a simple green salad on the side for a full meal.

Notes

Cook the onions low and slow for the best caramel flavor. Rinse canned beans to remove excess sodium. Adjust broth amount for a thicker or thinner soup.
