Ingredients
  

Cajun Seasoning Blend

  • 1 Tbsp smoked paprika
  • 1.5 tsp kosher salt
  • 1.5 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp cayenne pepper or less, to taste
  • 0.5 tsp packed light brown sugar
  • 0.25 tsp dried thyme

Steak Bites

  • 1.5 lbs. steak (strip steak, sirloin, ribeye, etc.)
  • 2 Tbsp vegetable oil, divided
  • 3 Tbsp unsalted butter
  • 5 cloves garlic, finely minced
  • to taste Minced fresh parsley for garnish

Instructions
 

Preparation

  • Slice steak into roughly 2" pieces and set aside in a mixing bowl.
  • Combine seasoning blend ingredients in a small bowl, then add to the steak and toss to coat.

Cooking

  • Heat a large heavy-bottomed skillet over medium-high heat until it smokes slightly.
  • Add 1 Tbsp of oil and swirl to coat the pan. Place half the steak bites in the skillet without overcrowding.
  • Sear for 2 minutes per side until well browned. Set aside and repeat with the remaining oil and steak.
  • Reduce heat to medium-low. Add butter and minced garlic to the skillet, cooking for about 30 seconds while scraping the browned bits off the bottom.
  • Turn off the heat. Return all steak bites to the skillet, stirring into the garlic butter. Garnish with parsley and serve immediately.

Notes

For best taste and texture, serve the steak bites right from the skillet. They pair well with simple sides that soak up garlic butter. Store cooled steak bites in an airtight container in the refrigerator and use within 3–4 days. Reheat gently in a hot skillet to retain crust and moisture. To make a lighter side, consider serving with a white bean skillet.
