  • 1.5 pounds cod fillets, skinless About 4 fillets
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 whole lemon — zest and juice
  • to taste Salt and black pepper
  • 2 tablespoons chopped fresh parsley Optional

Preparation

  • Pat the cod dry and season both sides with salt and pepper.
  • Heat butter and olive oil in a large skillet over medium heat.
  • Add minced garlic and cook for 30-60 seconds until fragrant; do not brown.

Cooking

  • Place cod in the pan and cook for 3-4 minutes per side, depending on thickness, until opaque and flakes easily.
  • Spoon pan juices, garlic, and lemon juice over the fish while cooking.
  • Remove from heat, sprinkle lemon zest and parsley on top, and serve right away.

Notes

Serve hot for best texture. Pair with steamed or roasted vegetables, rice, quinoa, or a simple green salad with vinaigrette. For leftover storage, cool quickly and refrigerate in an airtight container for up to 2 days. Reheat gently.
