  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cups potatoes, diced
  • 4 large eggs

Seasoning

  • to taste Salt
  • to taste pepper
  • Fresh herbs (optional) For added flavor

Instructions
 

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion and bell pepper, and sauté until soft.
  • Stir in diced potatoes and cook until browned and tender, about 10-15 minutes.
  • Make four wells in the mixture and crack an egg into each well.
  • Cover the skillet and cook until eggs are set to your liking.
  • Season with salt, pepper, and fresh herbs before serving.

Notes

Use a nonstick or well-seasoned skillet to prevent sticking. Cut potatoes small for faster cooking. If eggs cook too slowly, finish uncovered to help them set. Add cheese near the end if you like a creamy top.
