  • 4 medium potatoes, diced
  • 1 small onion, chopped
  • 1 medium bell pepper, chopped
  • 6 large eggs
  • 8 oz breakfast sausage or diced cooked ham
  • 1 cup shredded cheddar cheese
  • 2 tbsp oil or butter
  • to taste salt and pepper
  • 1 tsp smoked paprika (optional) Optional for added flavor

  • Heat oil in a large skillet over medium heat. Add potatoes and cook for 8-10 minutes until soft.
  • Add onion and bell pepper. Cook for 4-5 minutes until vegetables are tender.
  • Push veggies to one side. Add sausage and cook until heated and slightly browned.
  • Mix everything, then make six small wells in the mix for the eggs.
  • Crack eggs into the wells, cover, and cook for 4-6 minutes until whites are set and yolks are to your liking.
  • Sprinkle cheese on top, cover for 1 minute to melt. Season with salt, pepper, and smoked paprika. Serve hot.

Notes

Use par-cooked or leftover potatoes to save time. Cook eggs longer for firm yolks or less for runny yolks. Swap sausage for bacon or vegetarian sausage for a change. Add fresh herbs at the end for bright flavor.
