Ingredients
  

For the flatbread

  • 2 pieces flatbread crusts
  • 2 tablespoons olive oil for brushing
  • 4-6 tablespoons apricot jam
  • 1 pieces lemon zest from 1 lemon
  • 8 oz plain goat cheese crumbled
  • 1 cup fresh blueberries
  • 4-6 tablespoons honey for drizzling
  • 1 handful fresh mint leaves julienne cut
  • to taste Kosher salt for seasoning

For the crust (if making from scratch)

  • 3 cups all-purpose flour
  • 1 teaspoon table salt
  • 1 cup warm water
  • 3 tablespoons olive oil
  • as needed cornmeal for dusting

Instructions
 

Preparation

  • Preheat your oven to 500°F (260°C).
  • Brush each flatbread crust with olive oil.
  • Spread apricot jam and sprinkle lemon zest evenly over each crust.
  • Crumble goat cheese and distribute evenly over each crust.
  • Scatter blueberries over the goat cheese.

Baking

  • Bake in the preheated oven for 8-10 minutes, or until the edges of the crust turn golden brown.
  • Switch to broil for 1-2 minutes for a crispy finish.

Serving

  • Drizzle honey and sprinkle julienned mint over the hot flatbreads.
  • Season with a pinch of Kosher salt, slice, and serve immediately.

Notes

Use room temperature goat cheese for easy crumbling. Keep broil time short to avoid burning the fruit. Fresh mint adds brightness—add it right before serving for best color.
