Ingredients
  

Main Ingredients

  • 1 can black beans, drained and rinsed Use canned for convenience.
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup or agave nectar Adjust sweetness to preference.
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Use vegan if desired.

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan or line with parchment paper.
  • In a blender or food processor, combine the black beans, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt. Blend until smooth.
  • Stir in the chocolate chips by hand.

Baking

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 25-30 minutes, or until set.
  • Let cool before slicing into squares.

Notes

Serve warm or at room temperature. Great with ice cream or berries. Store in an airtight container for up to three days at room temperature or up to a week in the fridge. Can be frozen for up to three months.
