  • 1 loaf Baguette or crostini bread Can substitute with sourdough.
  • 2 tbsp Butter For searing the beef.
  • 2 large Egg yolks Used for making the Béarnaise sauce.
  • 2 tbsp White wine vinegar For the sauce.
  • 2 tbsp Shallots Finely chopped for sauce.
  • 1 tbsp Herbs (tarragon and chervil) Fresh herbs enhance flavor.

  • to taste Pepper For seasoning.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Season the beef tenderloin with salt and pepper, then sear it in a hot skillet with butter until browned.
  • Finish cooking the beef in the oven to desired doneness.
  • Let the beef rest, then slice it thinly.

Making the Béarnaise Sauce

  • In a saucepan, combine shallots, vinegar, and herbs. Reduce over heat.
  • Whisk in egg yolks and melted butter until thickened.

Toasting the Bread

  • Toast the baguette slices until golden.

Assembly

  • Assemble the crostini by placing sliced beef on the toasted bread and drizzling with Béarnaise sauce.
  • Serve immediately.

Notes

Serve warm for best texture. Drizzle with extra sauce and garnish with fresh herbs. Assemble just before serving to keep the bread crisp. Store beef slices and sauce separately in the fridge for up to 2 days.
