  • 2 tablespoons olive oil

  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • Salt and pepper to taste

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown on all sides.
  • Remove the beef and set aside. In the same pot, add the onion and cook until soft.
  • Add garlic, carrots, and potatoes, and cook for another 5 minutes.
  • Return the beef to the pot and pour in the beef broth.
  • Stir in thyme, bay leaf, salt, and pepper.
  • Bring to a simmer, cover, and cook for about 2 hours, or until the beef is tender.

Serving

Notes
