  • 4 tablespoons beef dripping Ensure the fat is very hot before adding the potatoes.

Preparation

  • Preheat the oven to 425°F (220°C).
  • Peel and chop the potatoes into even-sized chunks.
  • Place the potatoes in a pot of cold salted water and bring to a boil. Cook for 10 minutes, then drain and let steam dry.

Roasting

  • In a roasting tray, heat the beef dripping in the oven until hot.
  • Carefully add the potatoes to the roasting tray, rolling them in the hot fat until they are well coated.
  • Season with salt and pepper, adding fresh herbs if desired.
  • Roast in the oven for 40-50 minutes, turning occasionally, until golden and crispy.

Notes

Serve hot with a sprinkle of fresh herbs. They pair well with roast beef or grilled steaks. For added flavor, offer gravy or mustard on the side. To store, let cool, then keep in an airtight container in the fridge for up to 3 days. Reheat in a hot oven for 10-15 minutes.
