  • 4 pounds carrots, peeled and less than ½ inch thick
  • 2 pounds thin-sliced bacon Use thin-sliced for best results
  • 1/2 cup maple syrup Can substitute with honey for a different sweetness

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wrap each carrot tightly with a slice of bacon, starting from the thicker end.
  • Place bacon-wrapped carrots on a wire rack set on top of a baking sheet.

Cooking

  • Bake in the preheated oven for about 25 minutes, or until the bacon is crispy and the carrots are tender.
  • Remove from the oven and brush all sides with maple syrup.
  • Return to the oven and bake for an additional 8-10 minutes to caramelize the glaze.
  • Remove from the oven and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a 350°F (175°C) oven for 8–10 minutes to restore crispness. Use a wire rack on the baking sheet to ensure even cooking.
