  • 2 cups fresh apples, diced Pick crisp varieties like Honeycrisp or Granny Smith for the best flavor.
  • 2 cups sweet corn (fresh or frozen) Fresh corn will provide the best sweetness, but canned or frozen corn works too.
  • 1/2 cup onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper Adjust seasonings to your taste.
  • 1 teaspoon fresh parsley, chopped (optional)

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced onion and sauté until translucent.
  • Stir in the corn and cook for 3-4 minutes.
  • Add the diced apples, garlic powder, salt, and pepper.
  • Cook for an additional 5-7 minutes until the apples are tender.
  • Garnish with fresh parsley if desired before serving.

Notes

This dish can be served warm as a side or on top of grilled chicken or fish. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stove until hot. You can add cooked bacon or sausage for a heartier dish and experiment with different herbs like thyme or rosemary.
