Main Ingredients

  • 1 pound ground beef (or bison) Can substitute with ground turkey or chicken for a leaner option.
  • 1 cup lentils Quality lentils can be bought online or at local grocery stores.
  • 4 cups vegetable or beef broth Homemade broth can enhance flavor.
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups kale or spinach, chopped
  • 1 medium potato, diced (optional) Add for extra texture.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust seasoning as needed.

Preparation

  • In a large pot, brown the ground beef (or bison) over medium heat.
  • Add the diced onion and garlic, and sauté until soft.
  • Stir in the lentils, broth, diced tomatoes, Italian seasoning, and salt and pepper.

Cooking

  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • If using, add the diced potatoes and cook until tender.
  • Stir in the kale or spinach and cook for an additional 5 minutes.
  • Adjust seasoning if needed and serve hot.

Notes

Serve hot with crusty bread or a side salad. A sprinkle of grated Parmesan cheese on top adds a delightful touch. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat as needed.
