  • 1 cup grated carrots
  • 1 cup grated apples
  • 1 ripe banana Use ripe bananas for better sweetness
  • 1 cup flour (gluten-free if desired)
  • 1 cup sugar or sweetener of choice
  • 1/2 cup plant-based milk
  • 1/2 cup coconut oil or vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 pinch salt
  • cashew-coconut-lemon frosting (optional) Frosting is optional

Preparation

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  • In a large bowl, mash the banana, then mix in grated carrots and apples.
  • Add the oil and milk, and stir until combined.
  • In a separate bowl, mix the dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  • Combine the wet and dry ingredients, and mix until just combined.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Let cool before frosting with cashew-coconut-lemon frosting if desired.

Notes

Store the cake in an airtight container for up to three days at room temperature or in the fridge for up to a week. You can add nuts, raisins, or adjust spices based on preference.
